Nutmeg-Scented Winter Custard Delight

Description

A warm and comforting custard, gently spiced with nutmeg, perfect for a cozy winter evening.


Ingredients

  • 2 cups whole milk
  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon freshly grated nutmeg, plus extra for garnish


Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a medium saucepan, gently heat the milk over medium heat until small bubbles form around the edges. Do not boil.
  3. In a separate bowl, whisk together the egg yolks, sugar, and salt until light and fluffy.
  4. Gradually whisk about half of the warm milk into the egg mixture to temper the yolks. Then, slowly pour the tempered egg mixture back into the remaining milk in the saucepan, whisking constantly.
  5. Stir in the vanilla extract and freshly grated nutmeg.
  6. Pour the custard mixture into four 6-ounce ramekins or an 8×8 inch baking dish.
  7. Place the ramekins/baking dish in a larger baking pan. Fill the larger pan with hot water until it reaches halfway up the sides of the ramekins/baking dish (this is a water bath or bain-marie).
  8. Carefully transfer the baking pan to the preheated oven and bake for 30-35 minutes for ramekins, or 40-50 minutes for a baking dish, or until the edges are set and the center is just slightly wobbly.
  9. Remove from the oven and carefully take the ramekins/baking dish out of the water bath. Let cool to room temperature, then chill in the refrigerator for at least 2 hours before serving.
  10. Garnish with a sprinkle of fresh nutmeg before serving.
