Description

Tender chicken marinated in Mediterranean spices, grilled to perfection, and served with a creamy hummus spread.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 1 cup prepared hummus
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • Wooden or metal skewers


Instructions

  1. In a large bowl, combine the chicken cubes, bell pepper pieces, and red onion pieces.
  2. In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper.
  3. Pour the marinade over the chicken and vegetables, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  4. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  5. Preheat grill to medium-high heat.
  6. Thread the marinated chicken and vegetables alternately onto the skewers.
  7. Grill skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender-crisp.
  8. While skewers are grilling, prepare the hummus spread: In a small bowl, combine hummus, lemon juice, and parsley. Mix well.
  9. Serve the Mediterranean chicken skewers hot with the hummus spread on the side.

Notes

You can customize the seasonings to taste. For an extra kick, add a pinch of red pepper flakes to the marinade. Serve with pita bread or a side salad.
