Description
Tender chicken marinated in Mediterranean spices, grilled to perfection, and served with a creamy hummus spread.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1 cup prepared hummus
- 2 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
- Wooden or metal skewers
Instructions
- In a large bowl, combine the chicken cubes, bell pepper pieces, and red onion pieces.
- In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper.
- Pour the marinade over the chicken and vegetables, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat grill to medium-high heat.
- Thread the marinated chicken and vegetables alternately onto the skewers.
- Grill skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and vegetables are tender-crisp.
- While skewers are grilling, prepare the hummus spread: In a small bowl, combine hummus, lemon juice, and parsley. Mix well.
- Serve the Mediterranean chicken skewers hot with the hummus spread on the side.
Notes
You can customize the seasonings to taste. For an extra kick, add a pinch of red pepper flakes to the marinade. Serve with pita bread or a side salad.
