A vibrant and flavorful vegetarian lasagna featuring thin layers of sweet potato, butternut squash, and carrot, complemented by salty feta, crunchy walnuts, and a sweet and tangy cranberry-honey glaze.
Ingredients
- 1 large sweet potato, peeled and thinly sliced
- 1 small butternut squash, peeled, seeded, and thinly sliced
- 3 large carrots, peeled and thinly sliced lengthwise
- 8 ounces crumbled feta cheese
- 3/4 cup chopped walnuts
- 1/2 cup dried cranberries
- 1/4 cup honey
- 2 tablespoons olive oil
- 1/4 cup water
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- In a small saucepan, combine dried cranberries, honey, and water. Bring to a gentle simmer over medium heat, stirring occasionally, until cranberries are softened and a glaze forms, about 5-7 minutes. Set aside.
- Arrange a single layer of sweet potato slices in the bottom of the prepared baking dish. Drizzle lightly with olive oil and season with salt and pepper.
- Top the sweet potato layer with a layer of butternut squash slices, then a layer of carrot slices. Drizzle again with olive oil and season.
- Sprinkle about one-third of the crumbled feta cheese and one-third of the chopped walnuts over the carrot layer.
- Repeat the layering process: sweet potato, butternut squash, carrot, olive oil, seasonings, feta, and walnuts, until all vegetables are used, ending with a layer of vegetables.
- Pour the cranberry-honey glaze evenly over the top layer of vegetables.
- Cover the baking dish loosely with aluminum foil and bake for 30 minutes.
- Remove the foil and continue baking for another 15-20 minutes, or until vegetables are tender and slightly caramelized.
- Let stand for 5-10 minutes before serving. Garnish with fresh parsley, if desired.

You can customize the seasonings to taste. For a richer flavor, consider adding a sprinkle of thyme or rosemary to the vegetable layers. Adjust the amount of honey in the glaze based on your sweetness preference.
