Description

A vibrant and flavorful vegetarian lasagna featuring thin layers of sweet potato, butternut squash, and carrot, complemented by salty feta, crunchy walnuts, and a sweet and tangy cranberry-honey glaze.


Ingredients

  • 1 large sweet potato, peeled and thinly sliced
  • 1 small butternut squash, peeled, seeded, and thinly sliced
  • 3 large carrots, peeled and thinly sliced lengthwise
  • 8 ounces crumbled feta cheese
  • 3/4 cup chopped walnuts
  • 1/2 cup dried cranberries
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 1/4 cup water
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a small saucepan, combine dried cranberries, honey, and water. Bring to a gentle simmer over medium heat, stirring occasionally, until cranberries are softened and a glaze forms, about 5-7 minutes. Set aside.
  3. Arrange a single layer of sweet potato slices in the bottom of the prepared baking dish. Drizzle lightly with olive oil and season with salt and pepper.
  4. Top the sweet potato layer with a layer of butternut squash slices, then a layer of carrot slices. Drizzle again with olive oil and season.
  5. Sprinkle about one-third of the crumbled feta cheese and one-third of the chopped walnuts over the carrot layer.
  6. Repeat the layering process: sweet potato, butternut squash, carrot, olive oil, seasonings, feta, and walnuts, until all vegetables are used, ending with a layer of vegetables.
  7. Pour the cranberry-honey glaze evenly over the top layer of vegetables.
  8. Cover the baking dish loosely with aluminum foil and bake for 30 minutes.
  9. Remove the foil and continue baking for another 15-20 minutes, or until vegetables are tender and slightly caramelized.
  10. Let stand for 5-10 minutes before serving. Garnish with fresh parsley, if desired.

Notes

You can customize the seasonings to taste. For a richer flavor, consider adding a sprinkle of thyme or rosemary to the vegetable layers. Adjust the amount of honey in the glaze based on your sweetness preference.
