Description

A vibrant and flavorful Greek-inspired appetizer board featuring homemade spicy hummus, crispy pita chips, and an assortment of fresh Mediterranean delights. Perfect for entertaining or a light meal.


Ingredients

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1-2 tablespoons sriracha or other hot sauce (to taste)
  • 1/4 cup cold water
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 4-5 pita breads, cut into triangles
  • 1 tablespoon olive oil (for pita chips)
  • 1/2 teaspoon dried oregano (for pita chips)
  • 1/4 cup crumbled feta cheese
  • 1/2 cup Kalamata olives
  • 1/2 cucumber, thinly sliced or chopped
  • 1/2 pint cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • Fresh parsley, chopped, for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. To make pita chips: Toss pita triangles with 1 tablespoon olive oil and dried oregano on a baking sheet. Spread in a single layer and bake for 8-12 minutes, or until golden and crispy. Let cool.
  3. To make spicy hummus: In a food processor, combine chickpeas, tahini, lemon juice, minced garlic, sriracha, 1/4 cup cold water, 2 tablespoons extra virgin olive oil, and ground cumin. Process until smooth and creamy, adding more water if needed to reach desired consistency. Season with salt and pepper to taste.
  4. Assemble the board: Spread the spicy hummus in a bowl and place it on a large serving board or platter.
  5. Arrange the pita chips around the hummus.
  6. Artfully arrange the crumbled feta cheese, Kalamata olives, sliced cucumber, halved cherry tomatoes, and sliced red onion on the board.
  7. Drizzle the hummus and vegetables with a little extra virgin olive oil.
  8. Garnish with fresh chopped parsley.
  9. Serve immediately and enjoy!

Notes

You can adjust the spice level of the hummus by adding more or less sriracha. For an extra touch, you can lightly toast the pita chips with a sprinkle of paprika. Feel free to add other Greek-inspired elements like dolmades, bell pepper strips, or a tzatziki dip.
