Description

Chicken breasts stuffed with a delicious and festive mixture of cranberries, spinach, and Parmesan cheese, then baked until golden and juicy.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup dried cranberries
  • 1/4 cup freshly grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons chicken broth or white wine (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Carefully slice a pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
  3. In a medium bowl, combine the chopped spinach, dried cranberries, Parmesan cheese, minced garlic, salt, and pepper. Mix well.
  4. Spoon an equal amount of the stuffing mixture into each chicken breast pocket.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side, until lightly browned.
  6. If using, add chicken broth or white wine to the skillet, then transfer the skillet to the preheated oven.
  7. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Remove from oven, let rest for a few minutes before serving.
