Description
Chicken breasts stuffed with a delicious and festive mixture of cranberries, spinach, and Parmesan cheese, then baked until golden and juicy.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cups fresh spinach, roughly chopped
- 1/2 cup dried cranberries
- 1/4 cup freshly grated Parmesan cheese
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons chicken broth or white wine (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Carefully slice a pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
- In a medium bowl, combine the chopped spinach, dried cranberries, Parmesan cheese, minced garlic, salt, and pepper. Mix well.
- Spoon an equal amount of the stuffing mixture into each chicken breast pocket.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side, until lightly browned.
- If using, add chicken broth or white wine to the skillet, then transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove from oven, let rest for a few minutes before serving.
