Ingredients
- 2 large yellow onions, peeled and cut into 1/2-inch thick rings
- 8 ounces mozzarella cheese, cut into 1/4-inch slices
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 large eggs, beaten
- 2 cups panko breadcrumbs
- Vegetable oil, for deep frying
Instructions
- Carefully separate the onion rings. Select the larger rings for stuffing and stack two rings together, placing a slice of mozzarella cheese between them. Gently press to seal.
- In a shallow dish, combine the flour, salt, pepper, and paprika.
- In another shallow dish, add the beaten eggs.
- In a third shallow dish, add the panko breadcrumbs.
- Dredge each stuffed onion ring first in the flour mixture, shaking off any excess. Then dip it into the beaten eggs, ensuring it's fully coated. Finally, coat it generously with panko breadcrumbs, pressing gently to adhere.
- Heat vegetable oil in a large pot or deep fryer to 350°F (175°C).
- Carefully place a few stuffed onion rings into the hot oil, being careful not to overcrowd the pot. Fry for 3-4 minutes, or until golden brown and crispy, turning once.
- Remove the onion rings with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
- Serve immediately with your favorite dipping sauce.
Notes
You can customize the seasonings to taste. Try adding garlic powder or onion powder to the flour mixture for extra flavor. Ensure the oil is hot enough for frying to achieve maximum crispiness and prevent sogginess. For best results, use fresh mozzarella.
