Ingredients
- 2 ripe avocados, diced
- 2 medium tomatoes, diced
- 1/2 small red onion, thinly sliced
- 2 tablespoons fresh lime juice
- 1 tablespoon extra virgin olive oil
- 1/4 cup fresh cilantro, chopped
- Salt to taste
- Black pepper to taste
Instructions
- In a large bowl, gently combine the diced avocados, diced tomatoes, and thinly sliced red onion.
- Pour the fresh lime juice and extra virgin olive oil over the salad ingredients.
- Add the chopped fresh cilantro, salt, and black pepper to taste.
- Gently toss all ingredients together until well combined. Be careful not to mash the avocados.
- Serve immediately as a side dish or light meal.
Notes
You can customize the seasonings to taste. For a bit of heat, add a pinch of chili flakes. For added crunch, consider adding a few cucumber slices.
