Description

A refreshing and healthy salad packed with flavor from ripe avocados, juicy tomatoes, and crisp red onion.


Ingredients

  • 2 ripe avocados, diced
  • 2 medium tomatoes, diced
  • 1/2 small red onion, thinly sliced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • Black pepper to taste


Instructions

  1. In a large bowl, gently combine the diced avocados, diced tomatoes, and thinly sliced red onion.
  2. Pour the fresh lime juice and extra virgin olive oil over the salad ingredients.
  3. Add the chopped fresh cilantro, salt, and black pepper to taste.
  4. Gently toss all ingredients together until well combined. Be careful not to mash the avocados.
  5. Serve immediately as a side dish or light meal.

Notes

You can customize the seasonings to taste. For a bit of heat, add a pinch of chili flakes. For added crunch, consider adding a few cucumber slices.
