Description

Soft, buttery cookies filled with sweet raspberry jam and topped with a crunchy crumble for a delightful treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup raspberry jam
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, granulated sugar, softened butter, vanilla extract, baking powder, and salt until a dough forms. Press half the dough into the bottom of the baking sheet.
  3. Spread raspberry jam evenly over the dough layer.
  4. Combine oats and brown sugar, then sprinkle over the jam. Crumble the remaining dough on top.
  5. Bake for 20-25 minutes until golden brown. Let cool before cutting into squares.
