Description

Elegant, bite-sized appetizers featuring creamy brie cheese coated in crunchy pistachios and drizzled with a sweet-tart raspberry honey glaze.


Ingredients

  • 1 (8 oz) wheel of brie cheese, chilled
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup fresh raspberries
  • 2 tablespoons honey
  • 1 tablespoon water
  • 1 teaspoon lemon juice
  • 2 tablespoons vegetable oil for frying
  • Fresh mint leaves for garnish (optional)


Instructions

  1. Cut the chilled brie into 1-inch cubes, ensuring the rind is intact on each piece.
  2. Place flour, beaten egg, and chopped pistachios in three separate shallow bowls. Dredge each brie cube in flour, then dip in egg, and finally coat evenly with pistachios, pressing gently to adhere.
  3. In a small saucepan, combine raspberries, honey, water, and lemon juice. Cook over medium heat, mashing raspberries with a spoon, until mixture thickens slightly (about 5 minutes). Strain through a fine mesh sieve to remove seeds, then set glaze aside.
  4. Heat vegetable oil in a skillet over medium heat. Fry brie bites for 1-2 minutes per side until golden brown and cheese is slightly softened but not melted through. Transfer to a paper towel-lined plate.
  5. Arrange brie bites on a serving platter, drizzle with raspberry honey glaze, and garnish with mint leaves if desired. Serve immediately.
