Description
Elegant individual cheesecake domes with a creamy pistachio filling and a hidden raspberry center, set on a buttery biscuit base.
Ingredients
- 150g digestive biscuits, crushed
- 75g unsalted butter, melted
- 300g cream cheese, softened
- 100g powdered sugar
- 1 tsp vanilla extract
- 100g shelled pistachios, finely ground
- 200ml heavy cream, whipped to stiff peaks
- 12 fresh raspberries
- Pistachio crumbs and fresh mint for garnish
Instructions
- Mix crushed biscuits with melted butter and press into dome molds to form bases. Chill for 15 minutes.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in ground pistachios and whipped cream.
- Spoon half the filling into molds, place a raspberry in each, then top with remaining filling. Freeze for 4 hours or until set.
- Unmold domes, garnish with pistachio crumbs and mint. Serve chilled.
