Description

Elegant individual cheesecake domes with a creamy pistachio filling and a hidden raspberry center, set on a buttery biscuit base.


Ingredients

  • 150g digestive biscuits, crushed
  • 75g unsalted butter, melted
  • 300g cream cheese, softened
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • 100g shelled pistachios, finely ground
  • 200ml heavy cream, whipped to stiff peaks
  • 12 fresh raspberries
  • Pistachio crumbs and fresh mint for garnish


Instructions

  1. Mix crushed biscuits with melted butter and press into dome molds to form bases. Chill for 15 minutes.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in ground pistachios and whipped cream.
  3. Spoon half the filling into molds, place a raspberry in each, then top with remaining filling. Freeze for 4 hours or until set.
  4. Unmold domes, garnish with pistachio crumbs and mint. Serve chilled.
