Ingredients
- 2 medium zucchinis, sliced into 1/2-inch rounds
- 2 medium yellow squash, sliced into 1/2-inch rounds
- 1 pint cherry tomatoes, halved
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss the zucchini, squash, tomatoes, olive oil, garlic, oregano, salt, and pepper until evenly coated.
- Spread the vegetables in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until vegetables are tender and lightly browned.
- Remove from oven, sprinkle evenly with Parmesan cheese, and return to oven for 3-5 minutes until cheese is melted.
- Garnish with fresh basil before serving warm.
