Ingredients
- 2 large sweet potatoes, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 8 ounces burrata cheese, drained
- 1 orange, juiced and zested
- 1 lemon, juiced
- 1 tablespoon honey
- 1/4 cup shelled pistachios, roughly chopped
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, smoked paprika, salt, and pepper. Arrange in a single layer on a baking sheet and roast for 20-25 minutes until crispy and tender.
- While potatoes roast, prepare the citrus drizzle by whisking together orange juice, lemon juice, orange zest, and honey in a small bowl until smooth.
- Once sweet potato rounds are done, let cool slightly. Top each round with a small piece of burrata cheese.
- Drizzle the citrus mixture over the burrata-topped rounds. Sprinkle with chopped pistachios and garnish with fresh basil leaves. Serve immediately.
