Ingredients
- 1 cup store-bought or homemade hummus
- 8 oz burrata cheese, drained
- 1 cup mixed Mediterranean olives (such as Kalamata and Castelvetrano)
- 1 cup cherry tomatoes, halved
- 1 English cucumber, sliced
- 1 red bell pepper, sliced
- 1/4 red onion, thinly sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1 tsp dried oregano
- Salt and black pepper to taste
- 4 pieces pita bread, warmed and cut into wedges
- Fresh parsley or mint for garnish
Instructions
- Arrange the hummus in a shallow bowl or directly on a large serving platter. Place the burrata in the center of the platter, gently tearing it open slightly to expose the creamy interior.
- Scatter the olives, cherry tomatoes, cucumber slices, bell pepper slices, and red onion around the hummus and burrata on the platter.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and black pepper. Drizzle this dressing over the vegetables and burrata.
- Arrange the warm pita wedges around the edges of the platter. Garnish with fresh parsley or mint before serving.
