Description

A vibrant and healthy bowl featuring herbed lamb meatballs, fluffy rice, crisp vegetables, and a creamy tzatziki sauce, inspired by Mediterranean flavors.


Ingredients

  • 1 lb ground lamb or beef
  • 1/2 cup cooked rice (white or brown)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced red bell pepper
  • 1/4 cup crumbled feta cheese
  • 1 cup plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, mix ground lamb, rice, red onion, garlic, oregano, cumin, salt, and pepper. Form into 1-inch meatballs.
  2. Place meatballs on a baking sheet lined with parchment paper. Bake for 20-25 minutes, until cooked through and browned.
  3. While meatballs bake, prepare tzatziki by combining Greek yogurt, cucumber, lemon juice, dill, and a pinch of salt in a small bowl. Chill until ready to serve.
  4. Assemble bowls by dividing rice among four bowls. Top with meatballs, cherry tomatoes, red bell pepper, and feta cheese. Drizzle with tzatziki and olive oil before serving.
