Ingredients
- 1 lb lean ground beef
- 1 red bell pepper, sliced
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add diced onion and sliced bell pepper, sauté for 5 minutes until softened.
- Add ground beef, breaking it up with a spoon, and cook until browned, about 7-8 minutes.
- Stir in minced garlic, oregano, cumin, salt, and pepper, cooking for 1 minute until fragrant.
- Add cherry tomatoes and cook for another 3-4 minutes until they start to soften.
- Remove from heat, garnish with fresh parsley, and serve warm.
