A quick and flavorful stir fry featuring ground beef, fresh vegetables, and Mediterranean-inspired herbs and spices, perfect for a healthy weeknight dinner.
Ingredients
- 1 lb ground beef (85% lean)
- 1 medium onion, chopped
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
- Add the onion, bell pepper, and garlic to the skillet and stir-fry for 4-5 minutes until vegetables are tender-crisp.
- Stir in the cherry tomatoes, olives, oregano, paprika, salt, and pepper, and cook for another 3-4 minutes until tomatoes soften slightly.
- Remove from heat, garnish with fresh parsley, and serve immediately.
