Description

A quick and flavorful stir fry featuring ground beef, fresh vegetables, and Mediterranean-inspired herbs and spices, perfect for a healthy weeknight dinner.


Ingredients

  • 1 lb ground beef (85% lean)
  • 1 medium onion, chopped
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  3. Add the onion, bell pepper, and garlic to the skillet and stir-fry for 4-5 minutes until vegetables are tender-crisp.
  4. Stir in the cherry tomatoes, olives, oregano, paprika, salt, and pepper, and cook for another 3-4 minutes until tomatoes soften slightly.
  5. Remove from heat, garnish with fresh parsley, and serve immediately.
