Description

A quick and flavorful stir fry featuring seasoned ground beef, fresh vegetables, and Mediterranean herbs, perfect for a healthy weeknight dinner.


Ingredients

  • 1 lb lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon.
  2. Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until fragrant and softened.
  3. Stir in the red bell pepper, zucchini, cherry tomatoes, oregano, cumin, salt, and pepper. Cook for 5-7 minutes until vegetables are tender-crisp.
  4. Remove from heat and sprinkle with crumbled feta cheese and fresh parsley before serving.
