A quick and flavorful wrap featuring spiced ground beef, fresh vegetables, and creamy whipped feta, all tucked into warm pita bread for a satisfying Mediterranean-inspired meal.
Ingredients
- 1 lb ground beef (85% lean)
- 4 large pita bread rounds
- 1 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/4 tsp red pepper flakes
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tbsp fresh lemon juice
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- In a small food processor, blend the feta cheese and Greek yogurt until smooth and creamy to make the whipped feta. Set aside.
- Heat olive oil in a large skillet over medium heat. Add the ground beef, oregano, cumin, red pepper flakes, salt, and pepper. Cook, breaking up the meat, until browned and cooked through, about 8-10 minutes.
- While the beef cooks, combine the cucumber, cherry tomatoes, red onion, lemon juice, and a pinch of salt in a bowl to make a simple salad.
- Warm the pita bread in a dry skillet or microwave for 20-30 seconds until pliable.
- To assemble, spread a generous layer of whipped feta on each pita. Top with the cooked ground beef and the vegetable salad. Garnish with fresh parsley and serve immediately.
