Description
Tender chicken skewers marinated in zesty Mediterranean spices, grilled to perfection and served with a creamy homemade hummus spread.
Ingredients
- 1.5 lbs boneless, skinless chicken breast, cubed
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/4 tsp ground cumin
- Salt to taste
- Wooden or metal skewers
- Fresh parsley for garnish
Instructions
- Soak wooden skewers in water for 30 minutes if using.
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes.
- Thread marinated chicken onto skewers.
- Preheat grill or grill pan to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through.
- For the hummus, blend chickpeas, tahini, extra virgin olive oil, lemon juice, cumin, and salt in a food processor until smooth, adding water as needed for desired consistency.
- Serve chicken skewers over a spread of hummus, garnished with fresh parsley.
