Description

Tender chicken marinated in Mediterranean herbs and spices, grilled on skewers and served with creamy homemade hummus spread.


Ingredients

  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tbsp tahini
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/4 cup water
  • Wooden or metal skewers
  • Fresh parsley for garnish


Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes.
  2. While chicken marinates, prepare the hummus: In a food processor, combine chickpeas, tahini, olive oil, lemon juice, garlic, and water. Blend until smooth, adding more water if needed for desired consistency. Season with salt to taste.
  3. Preheat grill or grill pan to medium-high heat. Thread marinated chicken onto skewers.
  4. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  5. Serve chicken skewers over a spread of hummus, garnished with fresh parsley.
