Description
Tender chicken marinated in Mediterranean herbs and spices, grilled on skewers and served with creamy homemade hummus spread.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- 1 can (15 oz) chickpeas, drained and rinsed
- 3 tbsp tahini
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic
- 1/4 cup water
- Wooden or metal skewers
- Fresh parsley for garnish
Instructions
- In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes.
- While chicken marinates, prepare the hummus: In a food processor, combine chickpeas, tahini, olive oil, lemon juice, garlic, and water. Blend until smooth, adding more water if needed for desired consistency. Season with salt to taste.
- Preheat grill or grill pan to medium-high heat. Thread marinated chicken onto skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- Serve chicken skewers over a spread of hummus, garnished with fresh parsley.
