Mediterranean Chicken Skewers with Hummus Spread

Description

Tender, marinated chicken skewers grilled to perfection, served with a creamy homemade hummus spread and fresh Mediterranean sides.


Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 2 tbsp fresh parsley, chopped
  • Wooden or metal skewers (if wooden, soaked in water for 30 minutes)


Instructions

  1. In a bowl, whisk together olive oil, garlic, lemon juice, lemon zest, oregano, paprika, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes in the refrigerator.
  2. Thread the marinated chicken onto skewers, leaving a little space between pieces for even cooking.
  3. Preheat grill or grill pan to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  4. While chicken cooks, prepare hummus by blending chickpeas, tahini, 2 tbsp olive oil, and a pinch of salt in a food processor until smooth. Add water as needed for desired consistency.
  5. Serve chicken skewers hot with hummus spread, garnished with fresh parsley and extra lemon wedges on the side.
