Description
Tender, marinated chicken skewers grilled to perfection, served with a creamy homemade hummus spread and fresh Mediterranean sides.
Ingredients
- 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp tahini
- 2 tbsp fresh parsley, chopped
- Wooden or metal skewers (if wooden, soaked in water for 30 minutes)
Instructions
- In a bowl, whisk together olive oil, garlic, lemon juice, lemon zest, oregano, paprika, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes in the refrigerator.
- Thread the marinated chicken onto skewers, leaving a little space between pieces for even cooking.
- Preheat grill or grill pan to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- While chicken cooks, prepare hummus by blending chickpeas, tahini, 2 tbsp olive oil, and a pinch of salt in a food processor until smooth. Add water as needed for desired consistency.
- Serve chicken skewers hot with hummus spread, garnished with fresh parsley and extra lemon wedges on the side.
