Description

Tender, marinated chicken skewers grilled to perfection and served with a creamy homemade hummus spread, perfect for a light and flavorful meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 2 tbsp extra virgin olive oil
  • 1/4 cup water
  • Wooden or metal skewers (if wooden, soaked in water for 30 minutes)


Instructions

  1. In a bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, oregano, cumin, paprika, salt, and pepper. Add chicken cubes, toss to coat, and marinate for at least 30 minutes in the refrigerator.
  2. While chicken marinates, prepare the hummus: In a food processor, combine chickpeas, tahini, extra virgin olive oil, and water. Blend until smooth, adding more water if needed for desired consistency. Season with salt to taste.
  3. Thread marinated chicken cubes onto skewers. Preheat grill or grill pan to medium-high heat. Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  4. Serve chicken skewers hot with the hummus spread on the side, garnished with fresh parsley or a drizzle of olive oil if desired.
