Ingredients
- 2 medium beets, peeled and thinly sliced
- 2 medium sweet potatoes, peeled and thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil.
- In a bowl, toss the beet and sweet potato slices with olive oil, oregano, garlic powder, salt, and pepper.
- Layer the slices alternately in the baking dish, overlapping slightly.
- Cover with foil and bake for 25 minutes, or until vegetables are tender.
- Remove foil, sprinkle feta and walnuts on top, and bake uncovered for 5 more minutes until cheese softens.
- Garnish with fresh parsley before serving.
