Ingredients
- 2 medium beets, peeled and thinly sliced
- 2 medium sweet potatoes, peeled and thinly sliced
- 1 cup crumbled feta cheese
- 1/2 cup chopped walnuts
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
- In a bowl, toss beet and sweet potato slices with olive oil, garlic, oregano, salt, and pepper until evenly coated.
- Layer the slices alternately in the baking dish, starting with beets, then sweet potatoes, repeating until all slices are used.
- Sprinkle crumbled feta cheese evenly over the top layer.
- Cover with foil and bake for 25 minutes. Remove foil, sprinkle walnuts on top, and bake uncovered for another 10-15 minutes until vegetables are tender and top is golden.
- Garnish with fresh parsley before serving.
