Description
A quick, colorful stir-fry featuring tender beef, fresh zucchini, and sweet cherry tomatoes, all tossed in a zesty Mediterranean-inspired sauce and topped with crumbled feta cheese.
Ingredients
- 1 lb sirloin steak, thinly sliced
- 2 medium zucchinis, sliced into half-moons
- 1 pint cherry tomatoes, halved
- 1 red onion, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1/4 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat. Add the sliced beef and cook until browned, about 4-5 minutes. Remove from skillet and set aside.
- In the same skillet, add the red onion and zucchini. Stir-fry for 5-6 minutes until slightly softened. Add garlic, oregano, smoked paprika, salt, and pepper, cooking for 1 more minute until fragrant.
- Add the cherry tomatoes and cook for 2-3 minutes until they begin to soften. Return the beef to the skillet, toss everything together, and cook for another 2 minutes to heat through.
- Remove from heat and sprinkle with crumbled feta cheese and fresh parsley. Serve immediately over rice or with crusty bread.
