Description

A quick, colorful stir-fry featuring lean beef, fresh zucchini, and sweet cherry tomatoes, all tossed in a garlic-herb sauce and topped with crumbled feta for a Mediterranean twist.


Ingredients

  • 1 lb lean beef sirloin, thinly sliced
  • 2 medium zucchinis, sliced into half-moons
  • 1 pint cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add beef slices and cook until browned, about 4-5 minutes. Remove and set aside.
  2. In the same skillet, add red onion and zucchini. Stir-fry for 5-6 minutes until slightly tender. Add garlic, oregano, and paprika, cooking for 1 minute until fragrant.
  3. Add cherry tomatoes and cook for 2-3 minutes until they begin to soften. Return beef to the skillet, season with salt and pepper, and toss everything together. Cook for another 2 minutes to heat through.
  4. Remove from heat, sprinkle with crumbled feta and fresh parsley. Serve immediately over rice or quinoa if desired.
