Ingredients

  • 2 large sweet potatoes, peeled and sliced into rounds
  • 2 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 1 cup whole milk ricotta cheese
  • 1/2 cup fresh cranberries
  • 1/4 cup water
  • 2 tablespoons honey
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste
  • Fresh thyme leaves for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, salt, and pepper, then arrange on a baking sheet in a single layer.
  2. Roast sweet potatoes for 20 minutes, then brush with maple syrup and roast for another 10 minutes until tender and caramelized.
  3. While potatoes roast, combine cranberries, water, and honey in a small saucepan. Simmer over medium heat for 10 minutes until cranberries burst and sauce thickens. Stir in lemon zest and set aside to cool.
  4. In a bowl, mix ricotta with a pinch of salt until smooth and creamy.
  5. To serve, layer sweet potato rounds on plates, dollop with ricotta, drizzle with cranberry sauce, and garnish with fresh thyme.
