Description

A hearty, comforting bake featuring tender chicken, earthy mushrooms, and fresh spinach in a creamy, cheesy sauce—perfect for a low-carb dinner.


Ingredients

  • 2 boneless, skinless chicken breasts, cubed
  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender, about 5 minutes. Stir in spinach and cook until wilted, about 2 minutes.
  3. Return chicken to skillet. Pour in heavy cream, add thyme, salt, and pepper. Simmer for 3 minutes. Transfer mixture to a baking dish, top with mozzarella and Parmesan. Bake for 20 minutes until bubbly and golden.
