Ingredients
- 2 boneless, skinless chicken breasts, cubed
- 8 oz cremini mushrooms, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add mushrooms and garlic. Sauté until mushrooms are tender, about 5 minutes. Stir in spinach and cook until wilted, about 2 minutes.
- Return chicken to skillet. Pour in heavy cream, add thyme, salt, and pepper. Simmer for 3 minutes. Transfer mixture to a baking dish, top with mozzarella and Parmesan. Bake for 20 minutes until bubbly and golden.
