Description

A hearty and healthy one-pan bake featuring tender chicken, earthy mushrooms, and fresh spinach in a creamy, cheesy sauce, perfect for a low-carb dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 8 oz cremini mushrooms, sliced
  • 5 oz fresh spinach
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned, about 5-7 minutes. Season with salt, pepper, and oregano.
  3. Add mushrooms and garlic to the skillet. Cook until mushrooms are softened, about 5 minutes. Stir in spinach and cook until wilted, about 2 minutes.
  4. Transfer the chicken mixture to the prepared baking dish. Pour heavy cream evenly over the top, then sprinkle with mozzarella and Parmesan cheeses.
  5. Bake for 20-25 minutes, until the cheese is bubbly and golden brown. Let cool for 5 minutes before serving.
