Ingredients
- 4 boneless, skinless chicken cutlets (about 1.5 lbs)
- Salt and black pepper to taste
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped, plus extra for garnish
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 2 large tomatoes, diced
- 8 oz burrata cheese, torn into pieces
- Balsamic glaze for drizzling
Instructions
- Season chicken cutlets with salt and pepper. Set up three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan cheese and chopped basil.
- Dredge each cutlet in flour, then dip in egg, and coat evenly with the breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in a large skillet over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant. Add chicken cutlets and cook for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add diced tomatoes and cook for 2-3 minutes until slightly softened. Season with a pinch of salt.
- Place chicken cutlets on serving plates. Top each with tomato mixture and torn burrata pieces. Drizzle with balsamic glaze and garnish with fresh basil.
