Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 cup jasmine rice
- 1 cup fresh pineapple, diced
- 1/4 cup honey
- 3 tbsp fresh lime juice
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 1/4 cup chopped cilantro
- Salt and black pepper to taste
- Lime wedges for serving
Instructions
- Cook jasmine rice according to package instructions, then fluff and gently fold in diced pineapple and half of the chopped cilantro.
- In a small bowl, whisk together honey, lime juice, minced garlic, and soy sauce to create the glaze.
- Heat olive oil in a large skillet over medium-high heat, season shrimp with salt and pepper, and cook for 2-3 minutes per side until pink.
- Pour the honey-lime glaze over the shrimp in the skillet, stir to coat, and simmer for 1-2 minutes until the sauce thickens slightly.
- To serve, pack the pineapple rice into a small bowl or mold, invert onto a plate to form a stack, top with glazed shrimp, garnish with remaining cilantro, and serve with lime wedges.
