Description

A vibrant, tropical-inspired dish featuring succulent shrimp glazed in a sweet and tangy honey-lime sauce, served over a fluffy pineapple-infused rice stack for a refreshing and satisfying meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 1 cup fresh pineapple, diced
  • 1/4 cup honey
  • 3 tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1/4 cup chopped cilantro
  • Salt and black pepper to taste
  • Lime wedges for serving


Instructions

  1. Cook jasmine rice according to package instructions, then fluff and gently fold in diced pineapple and half of the chopped cilantro.
  2. In a small bowl, whisk together honey, lime juice, minced garlic, and soy sauce to create the glaze.
  3. Heat olive oil in a large skillet over medium-high heat, season shrimp with salt and pepper, and cook for 2-3 minutes per side until pink.
  4. Pour the honey-lime glaze over the shrimp in the skillet, stir to coat, and simmer for 1-2 minutes until the sauce thickens slightly.
  5. To serve, pack the pineapple rice into a small bowl or mold, invert onto a plate to form a stack, top with glazed shrimp, garnish with remaining cilantro, and serve with lime wedges.
