Description

A vibrant and flavorful dish featuring succulent honey-lime glazed shrimp layered over fragrant pineapple-infused rice, perfect for a quick and impressive meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 cups cooked jasmine rice
  • 1 cup fresh pineapple, diced
  • 1/4 cup honey
  • 3 tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 2 tbsp olive oil
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste


Instructions

  1. In a bowl, whisk together honey, lime juice, minced garlic, and soy sauce. Marinate shrimp in half of the mixture for 10 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and glazed. Remove and set aside.
  3. In the same skillet, add diced pineapple and cook for 2-3 minutes until slightly caramelized. Gently fold pineapple into cooked jasmine rice.
  4. To serve, layer pineapple rice in bowls or on plates, top with honey-lime shrimp, and garnish with chopped cilantro.
