Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 cups cooked jasmine rice
- 1 cup fresh pineapple, diced
- 1/4 cup honey
- 3 tbsp fresh lime juice
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 2 tbsp olive oil
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a bowl, whisk together honey, lime juice, minced garlic, and soy sauce. Marinate shrimp in half of the mixture for 10 minutes.
- Heat olive oil in a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and glazed. Remove and set aside.
- In the same skillet, add diced pineapple and cook for 2-3 minutes until slightly caramelized. Gently fold pineapple into cooked jasmine rice.
- To serve, layer pineapple rice in bowls or on plates, top with honey-lime shrimp, and garnish with chopped cilantro.
