A vibrant and refreshing layered dish featuring succulent shrimp marinated in honey and lime, stacked with creamy avocado and fluffy rice for a light yet satisfying meal.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp honey
- Juice and zest of 2 limes
- 2 cloves garlic, minced
- 1 tsp chili powder
- Salt and pepper to taste
- 2 cups cooked white rice, cooled
- 2 ripe avocados, diced
- 1/4 cup chopped fresh cilantro
- 1 tbsp olive oil
- Lime wedges for serving
Instructions
- In a bowl, whisk together honey, lime juice, lime zest, garlic, chili powder, salt, and pepper. Add shrimp and toss to coat. Marinate for 10 minutes.
- Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove from heat.
- In a separate bowl, gently mix cooked rice with diced avocado and chopped cilantro. Season with salt to taste.
- To assemble stacks, use a ring mold or small bowl. Layer rice mixture at the bottom, then top with cooked shrimp. Press gently and remove mold. Garnish with extra cilantro and lime wedges.
