A comforting and flavorful meal featuring juicy herb-crusted chicken breasts served with a colorful medley of sautéed peppers and mushrooms, alongside creamy, buttery mashed potatoes.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 1/2 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 8 ounces cremini mushrooms, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 4 large russet potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 1/4 cup sour cream
Instructions
- Preheat oven to 400°F (200°C). In a bowl, mix breadcrumbs, parsley, thyme, garlic powder, salt, and pepper. Brush chicken breasts with 1 tablespoon olive oil, then coat evenly with the herb breadcrumb mixture. Place on a baking sheet and bake for 20-25 minutes until cooked through.
- While chicken bakes, place potatoes in a pot, cover with water, and bring to a boil. Cook for 15-20 minutes until tender. Drain, then mash with milk, butter, sour cream, and salt to taste until creamy. Keep warm.
- In a large skillet, heat remaining 1 tablespoon olive oil over medium heat. Add onion, bell peppers, and mushrooms, sautéing for 8-10 minutes until softened. Stir in garlic and cook for 1 minute more. Season with salt and pepper.
- Serve herb-crusted chicken alongside creamy mashed potatoes and sautéed peppers and mushrooms.
