Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup breadcrumbs
- 2 tablespoons mixed dried herbs (such as thyme, rosemary, and parsley)
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 8 ounces cremini mushrooms, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 4 large russet potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup butter
- 1/4 cup sour cream
Instructions
- Preheat oven to 400°F (200°C). In a shallow dish, mix breadcrumbs, dried herbs, garlic powder, salt, and pepper. Coat chicken breasts evenly with the herb mixture.
- Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Transfer skillet to the oven and bake for 15-20 minutes, or until chicken is cooked through.
- While chicken bakes, place potatoes in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes until tender. Drain, then mash with milk, butter, and sour cream until smooth. Season with salt and pepper to taste.
- In a separate pan, heat remaining olive oil over medium heat. Add onions, bell peppers, and mushrooms. Sauté for 8-10 minutes until vegetables are tender. Stir in minced garlic and cook for an additional minute. Season with salt and pepper.
- Serve herb-crusted chicken alongside sautéed peppers and mushrooms, with creamy mashed potatoes on the side.
