Description

A hearty, low-carb casserole featuring seasoned ground beef, fresh zucchini, and melted cheese, perfect for a comforting family dinner.


Ingredients

  • 1 lb ground beef
  • 2 medium zucchinis, sliced into rounds
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup marinara sauce (no sugar added)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a skillet, heat olive oil over medium heat. Cook onion and garlic until fragrant, about 2 minutes.
  3. Add ground beef, breaking it up, and cook until browned. Drain excess fat.
  4. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Layer zucchini rounds in the baking dish, top with the beef mixture, and sprinkle cheese evenly.
  6. Bake for 25-30 minutes until zucchini is tender and cheese is bubbly. Let cool slightly before serving.
