Ingredients
- 1 lb ground beef
- 2 medium zucchinis, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 cup marinara sauce (sugar-free)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a skillet, heat olive oil over medium heat. Cook onion and garlic until softened, about 3 minutes.
- Add ground beef, breaking it up, and cook until browned. Drain excess fat.
- Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Layer sliced zucchini in the baking dish, top with the beef mixture, and sprinkle cheese evenly.
- Bake for 25-30 minutes until zucchini is tender and cheese is bubbly and golden.
