A quick and flavorful one-pan meal featuring seasoned ground beef, fresh spinach, and tangy feta cheese, perfect for a busy weeknight dinner.
Ingredients
- 1 lb ground beef (85% lean)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 6 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook until softened, about 3-4 minutes.
- Add ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Stir in minced garlic, oregano, salt, and pepper.
- Add cherry tomatoes and fresh spinach to the skillet. Cook until spinach wilts, about 2-3 minutes, stirring occasionally.
- Remove skillet from heat. Sprinkle crumbled feta cheese over the top and let it melt slightly before serving.
