Description
A fresh, protein-packed wrap featuring grilled zucchini, savory chickpeas, tangy feta, and a creamy herbed yogurt sauce, all wrapped in a soft tortilla for a quick and healthy meal.
Ingredients
- 2 medium zucchinis, sliced lengthwise
- 1 can (15 oz) chickpeas, rinsed and drained
- 1/2 cup crumbled feta cheese
- 1/2 cup plain Greek yogurt
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh mint, chopped
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and black pepper to taste
- 4 large whole-wheat tortillas
Instructions
- Preheat a grill or grill pan over medium-high heat. Brush zucchini slices with olive oil, season with salt and pepper, and grill for 3-4 minutes per side until tender and charred. Set aside.
- In a bowl, combine Greek yogurt, dill, mint, lemon juice, and a pinch of salt. Mix well to make the herbed yogurt sauce.
- In another bowl, toss chickpeas with a drizzle of olive oil, salt, and pepper. Lightly mash some chickpeas with a fork for texture.
- Warm tortillas according to package instructions. Spread a layer of herbed yogurt sauce on each tortilla.
- Layer grilled zucchini slices, chickpeas, and crumbled feta on top of the sauce. Roll up tightly, tucking in the sides as you go.
- Serve immediately, or wrap in foil for a portable meal. Optionally, cut in half diagonally for easier eating.
