Description

A fresh and flavorful wrap featuring grilled zucchini, crumbled feta, seasoned chickpeas, and a creamy herbed yogurt sauce, all wrapped in a soft tortilla for a quick, healthy meal.


Ingredients

  • 2 medium zucchinis, sliced lengthwise into 1/4-inch strips
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup crumbled feta cheese
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 large flour tortillas or wraps


Instructions

  1. Preheat a grill or grill pan over medium-high heat. Toss zucchini strips with 1 tablespoon olive oil, salt, and pepper. Grill for 3-4 minutes per side until tender and charred. Set aside.
  2. In a bowl, combine chickpeas with remaining olive oil, garlic powder, smoked paprika, salt, and pepper. Mash lightly with a fork to partially crush the chickpeas.
  3. In another bowl, mix Greek yogurt, dill, mint, lemon juice, and a pinch of salt to make the herbed yogurt sauce.
  4. Warm the tortillas briefly in a dry skillet or microwave. Spread a generous spoonful of herbed yogurt sauce onto each tortilla.
  5. Layer grilled zucchini, seasoned chickpeas, and crumbled feta on top of the sauce. Fold the sides of the tortilla inward and roll tightly to form a wrap.
  6. Serve immediately, or wrap in foil for a portable meal. Cut in half if desired.
