Description
A fresh and flavorful Mediterranean-inspired wrap featuring grilled zucchini, seasoned chickpeas, tangy feta cheese, and a creamy herbed yogurt sauce, all wrapped in a soft tortilla.
Ingredients
- 2 medium zucchinis, sliced lengthwise
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup crumbled feta cheese
- 4 large flour tortillas or wraps
- 1 cup plain Greek yogurt
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh mint, chopped
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 lemon, juiced
Instructions
- Preheat a grill or grill pan over medium-high heat. Brush zucchini slices with olive oil and season with salt and pepper. Grill for 3-4 minutes per side until tender and charred. Set aside.
- In a bowl, combine chickpeas, garlic powder, smoked paprika, a squeeze of lemon juice, salt, and pepper. Toss to coat.
- In another bowl, mix Greek yogurt, chopped dill, chopped mint, remaining lemon juice, salt, and pepper to make the herbed yogurt sauce.
- Warm the tortillas slightly on the grill or in a dry skillet for about 30 seconds per side.
- Assemble each wrap: spread a generous layer of herbed yogurt sauce on a tortilla. Top with grilled zucchini slices, seasoned chickpeas, and crumbled feta.
- Fold the sides of the tortilla inward, then roll tightly from the bottom to enclose the filling. Serve immediately.
