A creamy hummus topped with fresh Greek-inspired vegetables, feta cheese, and herbs for a vibrant and flavorful appetizer or snack.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 3 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 3 tablespoons olive oil, plus extra for drizzling
- 1/4 cup water, or as needed for consistency
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced cucumber
- 1/2 cup diced tomato
- 1/4 cup diced red onion
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
- Kalamata olives, for garnish (optional)
Instructions
- In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth, adding water gradually until desired creamy consistency is reached.
- Spread the hummus evenly on a serving plate or shallow bowl.
- Top the hummus with diced cucumber, tomato, and red onion in an even layer.
- Sprinkle crumbled feta cheese, parsley, and dill over the vegetables.
- Drizzle with additional olive oil and garnish with Kalamata olives if using.
- Serve immediately with pita bread, crackers, or vegetable sticks.
