Description

A creamy hummus topped with fresh Greek-inspired vegetables, feta cheese, and herbs for a vibrant and flavorful appetizer or snack.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil, plus extra for drizzling
  • 1/4 cup water, or as needed for consistency
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomato
  • 1/4 cup diced red onion
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • Kalamata olives, for garnish (optional)


Instructions

  1. In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth, adding water gradually until desired creamy consistency is reached.
  2. Spread the hummus evenly on a serving plate or shallow bowl.
  3. Top the hummus with diced cucumber, tomato, and red onion in an even layer.
  4. Sprinkle crumbled feta cheese, parsley, and dill over the vegetables.
  5. Drizzle with additional olive oil and garnish with Kalamata olives if using.
  6. Serve immediately with pita bread, crackers, or vegetable sticks.
