Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 3 tablespoons lemon juice
- 2 cloves garlic, minced
- 2 tablespoons olive oil, plus extra for drizzling
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced cucumber
- 1/2 cup diced cherry tomatoes
- 1/4 cup sliced Kalamata olives
- 1/4 cup crumbled feta cheese
- 1 tablespoon chopped fresh dill
Instructions
- In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth, adding 1-2 tablespoons of water if needed for consistency.
- Spread the hummus evenly on a serving plate or shallow bowl.
- Top with diced cucumber, cherry tomatoes, Kalamata olives, and crumbled feta cheese.
- Drizzle with additional olive oil and sprinkle with fresh dill before serving.
