Description

A creamy hummus topped with fresh Greek-inspired vegetables, feta cheese, and a drizzle of olive oil for a vibrant appetizer or snack.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced cucumber
  • 1/2 cup diced cherry tomatoes
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped fresh dill


Instructions

  1. In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth, adding 1-2 tablespoons of water if needed for consistency.
  2. Spread the hummus evenly on a serving plate or shallow bowl.
  3. Top with diced cucumber, cherry tomatoes, Kalamata olives, and crumbled feta cheese.
  4. Drizzle with additional olive oil and sprinkle with fresh dill before serving.
