Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 3 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 2 tablespoons water (as needed for consistency)
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup crumbled feta cheese
- 1 tablespoon fresh parsley, chopped
- Pita bread or vegetable sticks for serving
Instructions
- In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, and salt. Blend until smooth, adding water one tablespoon at a time until desired creamy consistency is reached.
- Transfer the hummus to a serving plate or bowl, spreading it evenly with a spoon to create a slight well in the center.
- Top the hummus with cherry tomatoes, cucumber, Kalamata olives, red onion, and crumbled feta cheese, arranging them in sections or mixing as desired.
- Garnish with fresh parsley and drizzle with a little extra olive oil if preferred.
- Serve immediately with pita bread or vegetable sticks for dipping. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
