Description

A creamy and flavorful hummus topped with fresh Greek-inspired ingredients like tomatoes, cucumbers, olives, and feta cheese, perfect for dipping or as a healthy appetizer.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 2 tablespoons water (as needed for consistency)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon fresh parsley, chopped
  • Pita bread or vegetable sticks for serving


Instructions

  1. In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, and salt. Blend until smooth, adding water one tablespoon at a time until desired creamy consistency is reached.
  2. Transfer the hummus to a serving plate or bowl, spreading it evenly with a spoon to create a slight well in the center.
  3. Top the hummus with cherry tomatoes, cucumber, Kalamata olives, red onion, and crumbled feta cheese, arranging them in sections or mixing as desired.
  4. Garnish with fresh parsley and drizzle with a little extra olive oil if preferred.
  5. Serve immediately with pita bread or vegetable sticks for dipping. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
