Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced cucumber
- 1/2 cup diced cherry tomatoes
- 1/4 cup sliced Kalamata olives
- 1/4 cup crumbled feta cheese
- 1 tablespoon chopped fresh parsley
- 1 teaspoon dried oregano
Instructions
- In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth and creamy, adding a tablespoon of water if needed to reach desired consistency.
- Spread the hummus evenly on a serving plate or shallow bowl.
- Top the hummus with diced cucumber, cherry tomatoes, Kalamata olives, and crumbled feta cheese.
- Sprinkle with chopped parsley and dried oregano for garnish.
