Description

A visually stunning and refreshing layered salad featuring classic Greek ingredients, perfect as a light lunch or elegant appetizer.


Ingredients

  • 2 large ripe tomatoes, diced
  • 1 English cucumber, diced
  • 1 red onion, thinly sliced
  • 1 green bell pepper, diced
  • 1 cup Kalamata olives, pitted
  • 8 oz feta cheese, cubed
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh dill for garnish


Instructions

  1. In a large bowl, combine tomatoes, cucumber, red onion, bell pepper, and olives.
  2. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the vegetable mixture and toss gently to coat.
  4. Using a ring mold or a tall glass, layer the salad mixture alternately with feta cheese cubes to create a tower shape on each plate.
  5. Carefully remove the mold, garnish with fresh dill, and serve immediately.
