A visually stunning and refreshing layered salad featuring classic Greek ingredients, perfect for a light lunch or elegant appetizer.
Ingredients
- 2 large cucumbers, peeled and diced
- 4 ripe tomatoes, diced
- 1 red onion, thinly sliced
- 1 green bell pepper, diced
- 1 cup Kalamata olives, pitted and halved
- 8 oz feta cheese, crumbled
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
- In a large bowl, combine cucumbers, tomatoes, red onion, bell pepper, olives, feta, dill, and mint.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.
- Pour the dressing over the salad mixture and toss gently to combine.
- Using a ring mold or tall glass, layer the salad tightly into 4 individual towers on serving plates.
- Carefully remove the mold, garnish with extra herbs if desired, and serve immediately.
