Ingredients
- 2 large ripe tomatoes, diced
- 1 English cucumber, diced
- 1 red onion, thinly sliced
- 1 green bell pepper, diced
- 1 cup Kalamata olives, pitted and halved
- 8 oz block of feta cheese, cubed
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh dill or parsley for garnish
Instructions
- In a large bowl, combine the diced tomatoes, cucumber, red onion, bell pepper, and Kalamata olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
- Pour the dressing over the vegetable mixture and toss gently to coat everything evenly.
- Using a round mold or a small bowl, layer the salad mixture and feta cubes alternately, pressing down gently to form a compact tower.
- Carefully remove the mold and garnish the top with fresh dill or parsley. Serve immediately.
