Description
Crispy, golden smashed potatoes served with a creamy brie fondue and drizzled with fragrant garlic herb oil—a decadent appetizer or side dish.
Ingredients
- 1.5 lbs baby potatoes
- 2 tbsp olive oil
- Salt and black pepper to taste
- 8 oz brie cheese, rind removed and cubed
- 1/2 cup heavy cream
- 1/4 cup white wine
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh chives, chopped
- 1/4 cup extra virgin olive oil
- 1 tsp lemon zest
Instructions
- Boil potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
- Preheat oven to 425°F. Place potatoes on a baking sheet, gently smash each with a fork, drizzle with olive oil, and season with salt and pepper. Bake for 25-30 minutes until golden and crispy.
- In a saucepan over low heat, combine brie, heavy cream, and white wine. Stir until melted and smooth. Keep warm.
- In a small bowl, mix minced garlic, parsley, chives, extra virgin olive oil, and lemon zest. Set aside for flavors to meld.
- Arrange smashed potatoes on a platter, drizzle with warm brie fondue, and top with garlic herb oil. Serve immediately.
