Description

A vibrant, protein-packed salad featuring creamy chickpeas, tangy feta, sweet cranberries, and a zesty lemon vinaigrette, perfect for a light lunch or side dish.


Ingredients

  • 2 cans (15 oz each) chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper to taste


Instructions

  1. In a large bowl, combine chickpeas, feta cheese, cranberries, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until emulsified.
  3. Pour the vinaigrette over the chickpea mixture and toss gently to coat evenly.
